This is what I do to make a fantastic vegan pie:
Take a package of GoBIO! Organic Vanilla Pudding Mix and one tin of coconut milk. Boil until thick. Then pour into a pre-made graham cracker pie crust. Let it cool and set. Then take some pure Pomegranate Fruit Juice (you could use any good fruit juice) and some frozen fruit. Pour on top of pudding. Let set in fridge.
To me it tastes similar to cheese cake. Non-dairy. It takes no time at all. It is totally delicious and a hit at our house. Not too sweet.
