A refreshing, vegan, low calorie pudding
for 4 servings
3 bags of peppermint tea or an equivalent of fresh mint
1 pkg GoBIO! Chocolate Pudding Mix
2 Tbsp sweetener, e.g. cane sugar or maple syrup
2 cups (500 ml) water
Spring of fresh mint for decoration
Bring water to a boil and pour over mint. Let steep for 10 min. Remove peppermint and let cool until lukewarm. Prepare GoBIO! Organic Chocolate Pudding Mix accordingly to directions on the pouch, but use the tea instead of milk. Pour into dessert bowls and cool. Decorate with fresh mint before serving.
