2 ½ cups pastry flour
½ pkg aluminum-free baking powder
1 cup (200 g) butter
¾ cup raw cane sugar
1 tsp vanilla extract
1 pkg GoBIO! Vanilla Pudding Mix
1 ½ cups (350 g) chopped almonds, or a mix of chopped almonds and chocolate chips
Preheat oven to 390°F
Blend baking powder into flour. In a separate bowl mix butter, sugar, vanilla extract and pudding mix with an electric blender for about 5 min until creamy. Blend in the eggs. Slowly add the flour mixture and mix until well blended. Mix in the nuts or nut mixture.
Separate small portions of the batter with a teaspoon and place onto a greased cookie sheet. Flatten gently. Cookies will not spread much during baking.
Bake for 8-10 min. Makes about 50 cookies.
